Eggsperiment and Red Cabbage with Broccoli Curry

I have opened my kitchen doors to find out that the hubs indeed ate at Subway and Thai Heaven. It is unfair to single him out the only cooking I did was to fry an egg on the pavement while staying in Phoenix. It was 115 o F outside and the eggsperiment simply had to be conducted.

phoenix was so hot, we had to fry an egg on the pavement

After about 3 lonely hours on the pavement the yolk coagulated not cooked and the white evaporated. Perhaps a better surface and maybe with a little help of a mirror it would have been cooked to being edible. Did you know Oatman, Arizona has these competitions where you have to cook an egg using the sun alone, you are however allowed to use pans, mirrors, magnifying glasses and the time limit is 15 mins. 'Anyone game?

This is what was left of the poor egg.

Now back to what I made today, I went to the market and did not find many fresh vegetables and so now I have a strange combo of veggies in my fridge. Today I made a stir fry with red cabbage and broccoli. Enjoy

Preparation time: 10 mins
Cooking time: 20 mins
Serves: 3-4
Cost: 3.50$ ;0.70$ red cabbage + 1.60 broccoli + 1.00$ onion and tomato + 0.20$ for pantry

1 tiny head of red cabbage 4 cups when chopped
1 medium broccoli flower 2.5 cups with florets and stem
1/2 baseball sized onion 1 cup when chopped
1 golf ball sized tomato 1/2 cup when diced
1 garlic clove
10 curry leaves
2 tbsp of oil
1/4 tsp turmeric
1/2 tsp red chili powder
1/4 tsp garam masala
  • Prep your veggies, I used broccoli stems as well
  • Heat oil in a wok on med heat and add the garlic and onion together, add turmeric and red chili powder and saute it for about 4 mins till the onions carmelize
  • Add in the tomatoes cabbage and broccoli stems and put on the lid; cook for about 12 mins till the cabbage is tender
  • Now add in the broccoli florets and garam masala
  • cook for another 4 mins. Turn off the heat and put the lid back on
Serve with roti or rice. I tried it with tortilla and did not enjoy it as much.

I guess the rich flavour of roti cannot be compared to that of tortillas, which i find, here atleast, quite bland.
But, not a bad meal at all when you stand in front of an almost empty fridge.

i couldn,t agree with you more PG; I was bummed by the lack of fresh veggies, shrug. I guess its gonna be a boring week at the kitchen.

I just saw this recipe which I would like to try too:

It's easy, simple and still looks very good. You know, when you are in no mood of cooking an elaborate meal.
